Creamy Tomato Fusilli Pasta

Ingredients

  • 250 g fusilli pasta
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 150–200 g tomato passata or tomato sauce
  • 100 ml heavy cream
  • 50–70 g grated Parmesan
  • 80 g shredded mozzarella — optional
  • ½ tsp paprika
  • ½ tsp oregano
  • Black pepper
  • Salt
  • Chili flakes — optional
  • Fresh basil or parsley
  • ½ cup pasta water
