Salami, Cheese & Cucumber Skewers

Ingredients

  • 20–24 thin slices beef or turkey salami
  • 20–24 small cheese cubes — cheddar, Swiss, Gouda, or Monterey Jack
  • 2 large cucumbers
  • 20–24 small cubes of assorted cheese for the bottom
  • 1–2 tbsp fresh herbs, finely chopped
  • Black pepper, to taste
  • 20–24 wooden appetizer skewers or toothpicks

Cooking Instructions

    Prepare the cucumber: Wash the cucumbers and use a vegetable peeler to cut them lengthwise into very thin ribbons.

    Make the cucumber loops: Fold each ribbon into loose waves or loops and place them around the base of each skewer.
