Salami, Cheese & Cucumber Skewers

Ingredients
- 20–24 thin slices beef or turkey salami
- 20–24 small cheese cubes — cheddar, Swiss, Gouda, or Monterey Jack
- 2 large cucumbers
- 20–24 small cubes of assorted cheese for the bottom
- 1–2 tbsp fresh herbs, finely chopped
- Black pepper, to taste
- 20–24 wooden appetizer skewers or toothpicks
Cooking Instructions

Prepare the cucumber: Wash the cucumbers and use a vegetable peeler to cut them lengthwise into very thin ribbons.

Make the cucumber loops: Fold each ribbon into loose waves or loops and place them around the base of each skewer.

Add the bottom cheese: Cut assorted cheeses into chunky cubes and place one cube at the bottom of each skewer.

Fold the salami: Take one thin slice of salami and gently fold or curl it into a small cup/rose shape.

Add the cheese: Place a small cheese cube inside the center of the folded salami.

Secure the skewer: Push a wooden skewer vertically through the cheese and salami, keeping the cucumber underneath.
