Ingredients
- 12–14 small red tomatoes
- 1 large red bell pepper
- 8 oz (225 g) cream cheese, softened
- ¼ cup mayonnaise or sour cream
- 1 tbsp fresh parsley, finely chopped
- 1 tbsp fresh chives, finely chopped
- ½ tsp garlic powder
- ¼ tsp black pepper
- 10–12 long fresh chive stems
- 10–12 wooden skewers
- 2 large cucumbers
- 12–16 small mozzarella balls
- 12–16 thin slices of turkey or beef deli meat
- Fresh parsley, for garnish
Cooking Instructions
-
01
Wash and dry all the vegetables thoroughly.
-
02
Wash the small tomatoes and gently pat them dry.
-
03
Using a small sharp knife, make several V-shaped cuts across the top of each tomato to create tulip petals. Be careful not to cut all the way through the tomato.
-
04
In a bowl, combine the softened cream cheese, mayonnaise or sour cream, parsley, chives, garlic powder, and black pepper until smooth and creamy.
-
05
Transfer the mixture to a piping bag fitted with a star tip, then generously pipe the herb cream cheese into the center of each tomato.
-
06
To create the vase, carefully cut off the top of the large red bell pepper, then remove the seeds and inner membranes. Keep the pepper upright.
-
07
Take a wooden skewer, place a long chive stem against it, and gently wrap the chive around the skewer to create a green stem.
-
08
Carefully insert the end of each chive-covered skewer into the base of a stuffed tomato, making sure the tomato is securely held in place.
-
09
Repeat with all the tomatoes, then group them together to create a beautiful bouquet.
-
10
Place the ends of the skewers inside the large red bell pepper, which will serve as the vase, and adjust the tomatoes to create an attractive floral arrangement.
-
11
Slice the cucumbers lengthwise into very thin ribbons, then roll each ribbon tightly into a spiral.
-
12
Roll the turkey or beef slices into small roses, gently spreading the edges to create petals.nPlace the pepper vase with the tomato bouquet in the center of a large round wooden serving board.
-
13
Surround the base of the vase with fresh parsley, then arrange the cucumber spirals, mozzarella balls, and meat roses beautifully around the bouquet.
-
14
Adjust the tomatoes, chive stems, and garnishes to create a generous, balanced, and elegant presentation. Keep refrigerated until ready to serve.
Chef notes
- Choose firm, evenly sized red peppers for a neat tulip shape. - Use a sharp paring knife to cut the petals cleanly without slicing through the pepper. - Make sure the cream cheese is fully softened for smooth piping. - Chill the stuffed peppers for 15–20 minutes before arranging to help the filling hold its shape. - Use a star piping tip to create beautiful, flower-like cheese centers. - Prepare the cucumber rolls and meat roses ahead of time, then assemble the platter just before serving. - Keep the finished appetizer refrigerated until serving for the freshest presentation. - Add fresh parsley around the base to make the bouquet look fuller and more vibrant.
