Ingredients

  • 12 medium cauliflower florets, trimmed with flat bases (about 8 oz)
  • 3 large eggs, beaten
  • 1 tablespoon olive oil
  • 1 small red chili, thinly sliced
  • 1 small green chili, thinly sliced
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon black pepper (optional)
  • 1/4 teaspoon paprika (optional)

Cooking Instructions

  1. 01

Wash the cauliflower florets and pat them completely dry with paper towels. Trim the stems to create flat bases so the florets sit securely in the skillet. Keep the florets relatively small and similar in size for even cooking.

  2. 02

Heat the olive oil in a 10-inch nonstick skillet over medium heat. Arrange the cauliflower florets in a circular ring around the outer edge of the skillet, with the stems facing toward the center. Gently press them down to ensure good contact with the hot surface.

  3. 03

Crack the eggs into a mixing bowl and whisk vigorously until smooth and slightly frothy. Slowly pour the beaten eggs into the center of the cauliflower ring, allowing the mixture to spread between the florets and create one connected, pizza-shaped base.

  4. 04

Immediately scatter the sliced red and green chilies evenly over the uncooked eggs. Sprinkle with sea salt, adding black pepper and paprika if desired. Distribute the seasoning evenly for a balanced flavor.

  5. 05

Cover the skillet with a tight-fitting lid and reduce the heat to medium-low. Cook for 6 to 8 minutes, or until the eggs are completely set, the cauliflower is fork-tender, and the bottom develops a light golden crust. If needed, cook for another 1 to 2 minutes, checking that the bottom does not burn. The eggs should reach 160 degrees F (71 degrees C).

  6. 06

Remove the lid and turn off the heat. Allow the cauliflower egg pizza to rest for 1 minute so the base becomes firmer and easier to handle. Run a spatula around the edges, carefully loosen the bottom, and slide the pizza onto a serving plate. Slice into wedges and serve warm.

Chef notes

Choose small, evenly sized cauliflower florets to help them become tender before the eggs overcook. Pat the cauliflower completely dry before cooking to prevent excess moisture from making the egg base watery. Use a well-seasoned or nonstick skillet to help the pizza release without breaking. Adjust the amount of red and green chili according to your preferred spice level, or remove the seeds for milder heat. Keep the skillet covered during cooking to trap steam and help the cauliflower soften while the egg base sets. For a firmer, crispier bottom, remove the lid during the final minute of cooking and allow excess moisture to evaporate. Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days. Reheat gently in a covered skillet until heated through to 165 degrees F (74 degrees C).
