Ingredients
  

For the Pizza Crust:

  • 1 pizza dough (store-bought or homemade)
  • 2 tbsp olive oil (for brushing)
  • ½ tsp garlic powder (optional for extra flavor)

For the Bruschetta Topping:

  • 3 Roma tomatoes, diced
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • ¼ cup fresh basil, chopped
  • ½ tsp salt
  • ¼ tsp black pepper

For the Cheese (Optional):

  • ½ cup shredded mozzarella
  • ¼ cup ricotta cheese
  • 2 tbsp Parmesan cheese (optional)

For Garnish:

  • 2 tbsp balsamic glaze (for drizzling)
  • Extra fresh basil leaves

Instructions
 

Step 1: Prepare the Pizza Dough

  • Preheat your oven to 425°F (218°C).
  • Roll out the pizza dough on a lightly floured surface to your desired thickness.
  • Place it on a pizza stone or baking sheet. Brush with 1 tbsp olive oil and sprinkle with garlic powder for added flavor.
  • Pre-bake the crust for 5-7 minutes until slightly golden.

Step 2: Make the Bruschetta Topping

  • In a bowl, combine diced Roma tomatoes, minced garlic, chopped basil, salt, black pepper, and olive oil.
  • Let the mixture sit for 10 minutes to enhance the flavors.

Step 3: Assemble the Pizza

  • Brush the pre-baked crust with the remaining 1 tbsp olive oil.
  • If using cheese, add a thin layer of shredded mozzarella and small dollops of ricotta cheese.
  • Evenly spoon the bruschetta mixture across the pizza.

Step 4: Bake the Pizza

  • Return the pizza to the oven and bake for 5-7 minutes until the cheese melts and the edges are crispy.
  • Remove from the oven and let it cool for 2 minutes.

Step 5: Garnish & Serve

  • Drizzle with balsamic glaze and garnish with fresh basil leaves.
  • Slice and serve immediately for the best flavor and texture!
