Ingredients
  

  • 3 cups shredded green cabbage
  • 1 medium carrot, grated
  • 1 small onion, finely chopped
  • 2 eggs (or ¼ cup plain yogurt for egg-free)
  • ½ cup all-purpose flour (or chickpea flour for gluten-free)
  • ¼ cup grated cheese (optional)
  • ½ tsp garlic powder
  • ¼ tsp black pepper
  • ½ tsp salt
  • 2 tbsp chopped parsley or cilantro
  • 2–3 tbsp olive oil or avocado oil, for frying

Instructions
 

Step 1: Prep the Vegetables

  • Shred the cabbage, grate the carrot, and finely chop the onion. Add all veggies to a large mixing bowl.

Step 2: Mix the Batter

  • Add eggs (or yogurt), flour, cheese, and spices to the bowl. Mix everything well until it forms a sticky, uniform batter.

Step 3: Heat the Pan & Fry the Fritters

  • Place a non-stick or cast-iron pan over medium heat. Add 1–2 tablespoons of oil. Scoop about ¼ cup of batter per fritter, flatten slightly, and place in the hot pan.

Step 4: Fry Until Golden

  • Cook fritters for 3–4 minutes on each side until golden brown and crispy. Don’t overcrowd the pan—fry in batches if needed.

Step 5: Drain & Serve

  • Transfer the cooked fritters to a plate lined with paper towels to absorb excess oil. Serve warm with your favorite dipping sauce.

Notes

  • For extra crispiness, squeeze water out of the cabbage before mixing.
  • Use chickpea flour and dairy-free yogurt for a fully plant-based version.
  • Store leftovers in an airtight container in the fridge for 3–4 days. Reheat in a skillet or oven.
  • Fritters can be frozen for up to 2 months.
