- 1 box lemon cake mix (15.25 oz)
- 2 large eggs
- ⅓ cup vegetable oil
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix the Ingredients – In a large bowl, combine lemon cake mix, eggs, and oil. Stir until fully incorporated (dough will be slightly sticky).
Shape the Cookies – Use a cookie scoop or tablespoon to roll the dough into small balls.
Space the Cookies – Arrange dough balls 2 inches apart on the baking sheet.
Bake for 8–10 minutes, until edges are set but centers are soft.
Cool & Store – Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack. Store in an airtight container for up to 5 days.
- For a stronger lemon flavor, add fresh lemon zest or a few drops of lemon extract to the dough.
- To prevent cookies from spreading too much, chill the dough for 15–20 minutes before baking.
- For a crinkle-top effect, roll dough balls in powdered sugar before baking.
