Ingredients
  

  • 1 box lemon cake mix (15.25 oz)
  • 2 large eggs
  • ⅓ cup vegetable oil

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix the Ingredients – In a large bowl, combine lemon cake mix, eggs, and oil. Stir until fully incorporated (dough will be slightly sticky).
  • Shape the Cookies – Use a cookie scoop or tablespoon to roll the dough into small balls.
  • Space the Cookies – Arrange dough balls 2 inches apart on the baking sheet.
  • Bake for 8–10 minutes, until edges are set but centers are soft.
  • Cool & Store – Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack. Store in an airtight container for up to 5 days.

Notes

  • For a stronger lemon flavor, add fresh lemon zest or a few drops of lemon extract to the dough.
  • To prevent cookies from spreading too much, chill the dough for 15–20 minutes before baking.
  • For a crinkle-top effect, roll dough balls in powdered sugar before baking.
