Ingredients

Main Ingredients

  • 1 medium green cabbage, sliced into ¾–1 inch rounds
  • 1 lb ground beef (or ground turkey)
  • 1 egg
  • ¼ cup grated onion
  • 2 garlic cloves, minced
  • ½ cup breadcrumbs or almond flour
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • 1½ cups tomato or marinara sauce
  • 1 cup shredded mozzarella or provolone
  • 2 tbsp olive oil

Optional Add-ins:

  • 1 tbsp grated parmesan
  • 1 tbsp fresh chopped parsley or basil
  • ½ tsp red chili flakes

Instructions

Step 1 – Prep the Cabbage

  • Preheat oven to 400°F (204°C). Line a large baking tray with parchment paper. Slice cabbage into thick rounds and arrange them flat on the tray. Brush lightly with olive oil and sprinkle with salt and pepper.

Step 2 – Make the Meat Mixture

  • In a mixing bowl, combine ground meat, egg, grated onion, garlic, breadcrumbs, salt, pepper, and smoked paprika. Mix thoroughly until well combined.

Step 3 – Assemble the Cabbage Burgers

  • Place a meat patty on top of each cabbage slice. Spread 2 tablespoons of tomato sauce on top of each patty.

Step 4 – Bake

  • Bake for 30–35 minutes until patties are cooked through and cabbage is tender and golden on the edges.

Step 5 – Top with Cheese & Broil

  • Remove from the oven, sprinkle shredded cheese on each burger, and broil for 2–3 minutes until cheese is melted and bubbly. Garnish with parsley if desired and serve hot.

Notes

  • Make sure cabbage slices are thick enough to hold the burger weight.
  • Broiling helps melt and brown the cheese perfectly.
  • This recipe is great for low-carb and gluten-free diets — just use almond flour instead of breadcrumbs.
