  • 1 (20 oz) can pineapple chunks (drained)
  • 1 cup sharp cheddar cheese, shredded
  • ½ cup granulated sugar
  • ¼ cup all-purpose flour

Cracker Topping:

  • 1 ½ cups Ritz crackers, crushed
  • ½ cup unsalted butter, melted

Instructions

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13-inch baking dish with butter or cooking spray.
  • In a large mixing bowl, combine the drained pineapple chunks, tidbits, shredded cheddar cheese, sugar, and flour.
  • Stir until everything is evenly coated.
  • Pour the pineapple mixture into the greased baking dish and spread it evenly.
  • In a separate bowl, mix the crushed Ritz crackers with melted butter until well coated.
  • Sprinkle the buttery cracker mixture evenly over the pineapple layer.
  • Bake at 350°F for 25-30 minutes, or until the topping is golden brown and the cheese is bubbly.
  • Remove from the oven and let it cool for 5 minutes before serving.
  • Serve warm as a side dish with ham, turkey, or BBQ meats.

Notes

  • Drain pineapple thoroughly to prevent a watery casserole.
  • Use freshly shredded cheese for better melting.
  • Add a pinch of cinnamon or nutmeg for a subtle warm spice twist.
  • For extra crunch, mix in chopped pecans or walnuts into the cracker topping.
  • To make it gluten-free, use gluten-free crackers and replace flour with cornstarch.
