Ingredients

  • 1 large head green leaf lettuce
  • 2 large cucumbers, thinly sliced
  • 4–5 medium tomatoes, sliced
  • 2 cups green olives, pitted
  • 1 large green bell pepper, thinly sliced
  • 2 cups roasted chickpeas, seasoned
  • 10–12 slices white cheese such as mozzarella or provolone
  • 6–8 black olives for the center
  • 1 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • Salt and black pepper to taste

Cooking Instructions

  1. 01

Prepare the lettuce: Wash and dry the lettuce leaves thoroughly. Arrange them around the edges of a large rectangular serving platter.

  2. 02

Season the chickpeas: Toss the chickpeas with olive oil, paprika, garlic powder, oregano, salt, and pepper. Roast at 400u00b0F (200u00b0C) for 20u201325 minutes, until golden and crunchy.

  3. 03

Arrange the vegetables: Place overlapping cucumber slices along one side of the platter and tomato slices along the opposite side.

  4. 04

Add the olives: Fill the upper section with green olives.

  5. 05

Create the pepper ring: Arrange thin green pepper rings around the center.

  6. 06

Make the cheese flower: Cut the cheese into squares or petal-like pieces and layer them in overlapping circles to create a large flower shape.

  7. 07

Finish the center: Place black olives in the middle of the cheese flower.

  8. 08

Fill the bottom: Spread the roasted chickpeas generously across the lower section.

  9. 09

Serve: Keep chilled until serving and pair with your favorite hummus, tzatziki, or Mediterranean dip.

Chef notes

- Drain and pat dry all ingredients before arranging to keep the platter fresh and prevent excess moisture. - Use small bowls for dips and spreads to keep creamy ingredients contained and make the platter easier to serve. - Arrange ingredients in contrasting colors—fresh vegetables, olives, cheese, and dips—to create a vibrant Mediterranean look. - Group similar ingredients together instead of spreading everything evenly; this creates a more abundant and inviting presentation. - Add fresh herbs just before serving for a beautiful finishing touch and a burst of freshness.
