Ingredients
- 1 chicken breast (about 250–300 g), thinly sliced
- 1–2 tablespoons water
- 1 teaspoon Shaoxing rice wine
- 1 pinch salt
- 1/4 teaspoon baking soda
- 1 tablespoon cornstarch
- 1 tablespoon neutral oil
- 1 teaspoon sugar
- 2 tablespoons light soy sauce
- 1 tablespoon dark soy sauce
- 2 tablespoons oyster sauce
- 2–3 large Napa cabbage leaves, sliced
- 1/2 yellow onion, thinly sliced
- 1 medium carrot, cut into thin julienne strips
- 3–4 garlic cloves, finely chopped
- 2–3 green onions, cut into 4–5 cm pieces
- 450 g (16 oz) fresh egg Lo Mein noodles
- Water, for boiling
- 1 tablespoon Shaoxing rice wine, for stir-frying
- 2 tablespoons cooking oil

1. Slice the chicken breast into very thin strips. Combine with water, Shaoxing rice wine, salt, and baking soda. Add cornstarch and massage until the liquid is absorbed. Mix in the neutral oil and let marinate for 10 minutes.

2. Thinly slice the Napa cabbage, onion, carrot, and green onions. Finely chop the garlic. Mix the sugar, light soy sauce, dark soy sauce, and oyster sauce in a small bowl until the sugar dissolves.

3. Bring a pot of water to a boil. Add the marinated chicken and poach for 45 seconds to 1 minute, just until it turns white. Remove immediately and set aside.

4. In the same boiling water, cook the Lo Mein noodles with the Napa cabbage, carrots, and onions for 1–2 minutes, keeping the noodles al dente. Drain well.

5. Heat the cooking oil over high heat in a wok or large skillet. Add the garlic and stir-fry for a few seconds until fragrant.

6. Add the drained noodles and vegetables, followed by the blanched chicken. Pour the Shaoxing rice wine around the hot edges of the wok.

7. Add the prepared sauce and toss everything vigorously over high heat until the noodles are evenly coated and glossy.
