Ingredients
- 18–24 oz thinly sliced salami
- 12–16 oz sliced turkey or chicken deli meat
- 10–12 oz white cheddar or Swiss cheese, cut into small cubes
- 2–3 mandarins or clementines, peeled and separated
- 2 blood oranges, thinly sliced
- 1–2 cups fresh flat-leaf parsley
- 2–3 small mozzarella or provolone cups/bowls
- 1–2 cups additional cheese cubes for the border

Prepare the cheese: Cut the cheese into small, bite-sized cubes and set aside.

Prepare the citrus: Peel the mandarins and separate them into segments. Thinly slice the blood oranges into rounds.

Make the salami roses: Layer about 8–12 thin salami slices, slightly overlapping each other. Roll the layered slices tightly from one end to the other, then gently fan the outer edges to create a rose shape. Repeat to make 3 large roses.

Create the turkey fan: Fold or roll slices of turkey or chicken deli meat and arrange them in a fan shape along the top and bottom of the board.

Build the citrus layer: Arrange blood-orange slices in overlapping rows around the center of the board. Add mandarin segments near the top and bottom sections.

Add the salami: Arrange remaining salami slices along both sides of the board, overlapping each slice slightly for a beautiful layered effect.

Add the cheese: Place cheese cubes around the outer edges and fill the small cheese cups with additional cubes.

Place the roses: Position the three salami roses vertically down the center of the board, leaving even spacing between them.
