Ingredients
- 2 large cucumbers, thinly sliced
- 250 g thinly sliced beef salami, for the roses
- 250 g sliced provolone or Swiss cheese
- 18–20 green olives, pitted
- 250 g cherry tomatoes
- 5–6 fresh rosemary sprigs
Cooking Instructions
-
01
Prepare the cucumber: Slice the cucumbers very thinly and evenly. Arrange the slices around the outer edge of a large round serving platter, slightly overlapping each slice to create a continuous border.
-
02
Make the salami roses: Take several thin salami slices and overlap them slightly. Roll them tightly into a small rose shape, then gently loosen the outer edges to make the petals visible.
-
03
Add the olives: Place one green olive in the center of each salami rose. Arrange the roses in a circle just inside the cucumber border.
-
04
Create the cheese flower: Cut the cheese slices into elongated petal shapes. Arrange them in overlapping circles, pointing the tips outward, to form a large flower in the center.
-
05
Add the tomatoes: Place the cherry tomatoes tightly together in the middle of the cheese flower to create a full, colorful center.
-
06
Add the rosemary: Tuck fresh rosemary sprigs between the tomatoes and cheese petals, spreading them naturally like green leaves.
-
07
Finish the platter: Adjust the cucumber slices, salami roses, and cheese petals so the arrangement looks balanced and symmetrical. Chill until ready to serve.
Chef notes
- Use thin, evenly sliced cucumbers so they overlap neatly and create a uniform outer border. - For the salami roses, choose thin slices and roll them tightly to keep the flower shape. - Place a green olive in the center of each salami rose for a polished look. - Cut the cheese into similar-sized petals to keep the flower symmetrical. - Use fresh rosemary to add natural greenery and make the center look more like a real flower. - Arrange the cherry tomatoes tightly in the center so they form a full, rounded cluster. - Keep the platter chilled until serving to help the cheese and salami maintain their shape. - For the prettiest presentation, arrange everything symmetrically in concentric circles.
